Vinho verde isn’t a single wine. Alvarinho brings structure, Loureiro brings fragrance and freshness, Avesso brings body. For grilled fish, prefer freshness and medium acidity. For fried snacks, you need higher acidity.

The Vinhos Verdes region, in the northwest of Portugal, produces wines with moderate alcohol and good acidity. The grape variety explains much of the profile.

The 3 main grape varieties

Loureiro: aromatic, citrussy, floral. Light, with a dry finish. Ideal for salads, Portuguese ceviche of white fish and cod fritters without excessive grease.

Alvarinho: more structure, stone fruit, minerality. Stands up to oily fish such as grilled sardines, baked cod and octopus rice.

Avesso: medium body, broader texture, less aromatic. Good for snacks with cured cheese, roast chicken and dishes with generous olive oil.

How to pair without overcomplicating things

  • Acidity in the dish calls for acidity in the wine. Salad with sharp vinaigrette → well-chilled Loureiro at 8-10°C.
  • Fat calls for freshness. Sardines, lightly grilled chorizo, pataniscas → Alvarinho or Loureiro with lively acidity.
  • Salty and fried foods want fine bubbles or high acidity. Tapas-style snacks → verde with slight natural fizz or well chilled.

Serving temperature: 8-10°C for Loureiro, 9-11°C for Alvarinho and Avesso. Medium-sized glass, not too full, to keep it cool.
